A Week’s Worth of Kid-Approved Weeknight Dinners (That Won't Break the Bank!)

To make things easier, we’ve put together a week’s worth of dinners that are affordable, kid-approved, and easy to prepare. With these meals, you’ll be able to put tasty, comforting food on the table without spending a fortune.
Monday: One-Pot Spaghetti and Meat Sauce

Start the week off with a quick, hearty meal that the whole family will love.
Ingredients:
- 1 lb ground beef or turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 can (14.5 oz) diced tomatoes
- 1 tsp Italian seasoning
- 8 oz spaghetti noodles
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions:
1. In a large pot, cook the ground beef or turkey until browned. Drain any excess fat, then add the onion and garlic, cooking until softened.
2. Add the crushed tomatoes, diced tomatoes, Italian seasoning, and 3 cups of water. Bring to a boil.
3. Break the spaghetti noodles in half and add to the pot. Simmer for about 15 minutes, stirring occasionally, until the noodles are cooked.
4. Season with salt and pepper, sprinkle with Parmesan, and serve.
Tuesday: Cheesy Chicken and Rice Casserole

This casserole is creamy, comforting, and super easy to throw together.
Ingredients:
- 1 cup uncooked rice
- 2 cups chicken broth
- 1 lb chicken breast, cubed

Instructions:

- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 tsp taco seasoning
- 8 flour tortillas
- 1 1/2 cups shredded cheese (cheddar or Monterey Jack)
- Sour cream and salsa for serving
Instructions:
1. In a skillet, cook ground beef until browned. Drain excess fat, then stir in beans and taco seasoning.
2. Place a tortilla in the skillet, add a layer of cheese, beef and bean mixture, and another tortilla.
3. Cook each side until golden and cheese is melted. Repeat with remaining tortillas. Cut into wedges and serve with sour cream and salsa.
Thursday: Sheet Pan Sausage and Veggies
